Air Fryer Quesadilla
If you love your air fryer as much as I do, make sure to try these simple recipes next.
If you’re looking for new dinner ideas to give you a break from typical chicken dishes and grilled cheese sandwiches, here’s an easy dinner recipe to spice up weeknight meals.
Not only do these quesadillas make a tasty meal, but they’re easy enough to make that the kids can help get them on the table.
Served alongside refried beans, cabbage salad, and Mexican rice, this Quesadilla recipe is the centerpiece of a supper the whole family will enjoy.
– 3 large tortillas
– 1 cup shredded mozzarella cheese
– 1 cup chopped fresh spinach
– ⅓ cup diced red onion
– 1 cup diced tomato (grape/cherry tomatoes work best for a sweeter taste, or plum tomatoes)
– ½ cup feta cheese pepper, to taste
1- Cut the tortillas in half (keep whole for larger baskets). On one side, layer with mozzarella, spinach, red onion, tomato, feta, and more mozzarella. Season with a little pepper. (Or, layer with your favorite combination of cheese, vegetables, and quesadilla fillings)
2- Fold in half again. Insert a toothpick into the tip to secure. Spray the air fryer basket with oil. Place as many quesadillas as fit into the basket (it’s okay if they slightly overlap).
3- Spray the tops lightly with oil. You may need to cook them in batches, depending on how big the basket is.
4- Set the air fryer to 375° for 5 minutes. Remove toothpicks and flip halfway through. If tortillas are not browned to your liking after 5 minutes, continue to air fry in 1 minute increments. Remove from the basket using tongs and let cool before serving.
