Mom’s Famous Cream Puffs
This is the first time I’ve made my mom’s famous cream. I’m so glad they turned out as good as they did especially given the fact that I was using whole wheat sourdough flour.
These creamy whole-grain puffs are simply the bomb.
For whole-grain cream puffs, you can add any filling you like, like the typical pastry cream you usually see on an eclair.
I don’t like egg cream, so I chose an easier version, a whipped cream filling. You can also decorate it with melted chocolate or whatever you like.
Since I made this version, I’ve come up with this other type of cream puff, whole-grain chocolate cream puffs. These are also pretty cool so you might want to check them out too.
Don’t be afraid to make the famous Mama Cream. It’s really easy and once you get the hang of it you’ll love it. Just make sure you get a good infusion bag.

I love Mom’s Famous Cream Puffs, when I received my first cream puff from a bakery as a kid, I fell in love with even all the filling on my face.
These are really simple once you get the hang of making them, they have very few ingredients and choux dough can be used for a lot of different recipes.
Cream Puff can be made in many different ways and with many different fillings, I love your basic recipe that I present here today.
I love these, you can make them as small or as big as you want so you can really decide how much you want to make based on one recipe.
We love bigger ones, but we’ve made miniatures in the past and kids love them because sometimes they just can’t seem to complete a bigger one!
Other times we do a mix of big and small, it all depends on what or who we’re baking these for. But this is one of the most delicious pastry recipes we make.
I like to make it all year round, but it’s also fun around the holidays. It’s usually some kind of Christmas Day recipe for us and Christmas Eve is saved for all the cookies!
1 stick butter (8 Tablespoons)
1 cup water
1 tsp vanilla
MOM’S FAMOUS FILLING:
1 pint heavy cream
1 package (3.4 OUNCES) instant vanilla pudding
⅓ cup milk
Bring the butter, water and vanilla to a boil.
Add the flour and stir constantly until it leaves the side of the pot and forms a ball.
Remove and cool.
Beat in 4 eggs, one at a time until smooth.
Drop by T. onto parchment lined cookie sheets
Bake at 400 degrees for about 25-30 minutes.
Slice in half and pipe or scoop in Mom’s filling.
Dust with powdered sugar.
Beat the cream, pudding powder and milk in a mixer until thick like whipped cream!
