Frozen Peach Bellini

Bellini is light and refreshing and wonderfully champagne – 3 ingredients and 5 minutes are all you need! Very simple and easy!

Summer officially starts on June 21st, but we can kick off our summer party early with this peach blini. It is very good to hold this for another 3 weeks.

We are in the height of peach season here. I must say I love him. Nothing beats enjoying peaches in the height of their season.

Sweet, juicy, aromatic and very sweet. I am so excited to share 3 recipes with you guys this peach season. This is the first one.

I thought I’d start my peach series with a classic cocktail. Not just a cocktail but a refreshing iced cocktail that people love. Of course it’s Peach Bellini!

There are many variations of this great cocktail and I’ve already tried a few but this is my favorite as it uses fresh, frozen peaches.

I made it using peach nectar alone, by freezing it in ice cube trays and using the ones in a blender instead of frozen peaches and it works and it turns out really good but I prefer using frozen peaches.

Those that are in season are really great and make a huge difference in this drink. When they are out of season, freezing peach nectar is a really nice option though remember that in December.

●3 cups frozen peach slices

●1 cup mango nectar

●1 (750-mL) bottle Prosecco, chilled

DIRECTIONS:

➔Combine peach slices and mango nectar in blender until smooth.

➔Serve immediately, garnished with peach slices, if desired.
