• 1 large egg

• 1 cup of caster sugar

• 1 cup of cake flour

• ½ tsp of baking powder

• 1 tsp bicarbonate of soda

• 1 tbsp. of fine apricot jam

• 1 tbsp. of vinegar

• 1 cup of milk

• 2 tbsp. butter

Preheat the oven to 180 degrees.

In a large bowl, cream the butter, sugar and egg together.

Next add the rest of the ingredients and mix until well combined. Pour into a greased ovenproof dish. Bake in a preheated oven on 180°C for 35 minutes.

In a saucepan, heat all the sauce ingredients together stirring until nice and hot. Remove from the heat and pour the sauce over the hot pudding.

Serve with delicious custard or cream.
