Salsa de Molcajete Picosa

This molcajete sauce is one of the easiest hot sauce recipes to prepare, it is great to accompany some quesadillas, some tacos, sopes, a roast meat in short with whatever you most want.
The sauce is poured into a molcajete for some reason, for me it tastes better, I don’t know if it’s because of the flavor that the molcajete gives, maybe the technique, or simply because I love the fact of using a tool with as much history as the molcajete. but without a doubt it is one of my favorite sauces and the truth is that it is very easy to make.

When I was little in my house we didn’t eat much spicy food since my parents, being migrants, were used to us and therefore there were almost never sauces and in general Mexican food was not cooked on special occasions.
But at my friends’ houses as well as on the street there was always a good sauce to accompany whatever it was that was being eaten and that was where I was trying and discovering these spectacular flavors. Through trial and error I was discovering how the foods that I liked so much were made and this sauce is one of them.

WHAT ARE THE STEPS TO MAKE A MOLCAJETE SAUCE?
It all starts in a comal or a frying pan, the first step in making this sauce is to toast the ingredients, this will give it a slightly smoky flavor and it will cook the vegetables. In addition, it will allow us to remove the skin of the tomato, which is the next step. What follows is to get to work in the molcajete, for that first place the salt, chilies, onion and roasted garlic. They are ground until we have a kind of paste. Lastly, the tomatoes.
