I always have the best intentions when it comes to planning meals for the week, but I’ll be very honest…I usually have a hard time figuring out dinners!

It was on random school nights when I threw this wonderful chicken casserole of Doritos together.

To my surprise, my family went wild to eat this delicious and fun dish! They loved it so much that my kids often ask when I’m going to make Doritos casserole next!

There’s something satisfying about being able to skip the dinnertime fuss by putting all my ingredients in one plate, baking and enjoying.

Although I often complain about not having time to cook, preparing meals for my family is actually something I enjoy. I know, big shock, right?

With that said, I’m talking about quick and easy dinners a few nights a week.

There’s no point in putting in a lot of effort preparing a complex dinner or having to resort to junk food when you have this simple Chicken Doritos casserole recipe on hand.

I like to use roast chicken in this recipe to make it easier, but you can use any cooked chicken you like.

I think using grilled chicken is a great meal solution for busy families like mine, and there are so many ways you can turn chicken into hearty treats like this amazing Chicken Doritos recipe.


●3 c. shredded cooked chicken

●2 c. shredded Mexican cheese blend (divided)

●1 (10 oz.) can cream of chicken sou

●1/2 c. milk

●1/2 c. sour cream

●1 can Ro-Tel diced tomatoes with green chilies drained

●1/2 packet taco seasoning mix

●1 lg. bag Doritos

●Chopped lettuce

●Diced tomato


Preheat the oven to 350 degrees.

In a large bowl, mix together the shredded chicken, 1 cup of cheese, cream of chicken soup, milk, sour cream, Ro-Tel tomatoes, and taco seasoning mix. Stir well.

Grease a 2-quart casserole dish. Layer half of the crushed Doritos across the bottom of the dish.

Top with half of the chicken mixture. Add another layer of crushed Doritos, and then add another layer of the chicken mixture. Top with remaining 1 cup cheese.

Cover and bake for 30-35 minutes, until bubbling hot. Remove from the oven and top with chopped lettuce, diced tomato and more crushed Doritos.
