A few weeks ago on Facebook, I asked if you were all interested in our Back to Basics series on the best ways to bake proteins (chicken, pork, steak, seafood, tofu, etc.) in the oven. your answer? Yes resounding please.

My small kitchen has seen more than its share of overcooked steaks, perfectly dried pork chops, salmon skin sticking to pans, and uncrunchy tofu over the years, too.
And it’s never fun, especially since proteins can be pricey and meant for special occasions. But hey, this is all part of the adventure of learning how to cook.
And in the end, I trial and error made my way to some basic ways to bake proteins that have become very reliable, and very tasty foods in my kitchen.

Specifically, skinless chicken breasts. Over the years, I’ve received countless requests for new chicken breast recipes, and many more for tips on how to bake chicken breasts in the oven.
Because anyone who has worked with chicken breasts before knows they can be incredibly versatile, but also incredibly difficult to work with, especially when baked in the oven.
Cook it the wrong way and you’ll end up with a disaster that’s dry, chewy, tough, and flavorless. But cook it the right way?! We’re talking tender, tender, flavorful, perfectly baked chicken breasts that you’ll love.
The good news is that it’s also easy to customize completely with your favorite condiments or sauces. Also, it is very easy to make using the 5-step baked chicken breast method.

Ingredients
●6 bone-in chicken thighs with skin (approx. 5-6 ounces each)
●2 tablespoons olive oil
●2-3 teaspoons chicken seasoning or Italian seasoning
●salt and pepper to taste
Instructions
Preheat oven to 425°F. Line a pan with foil and place a baking rack on top.
Dab chicken skin dry with a paper towel to remove any moisture.
Drizzle chicken with olive oil and season with seasoning, salt and pepper.
Place on the rack and bake 35-40 minutes or until chicken reaches 165°F.
Broil 2-3 minutes.
