You’ll need :
500g extra lean minced beef
1 onion, finely chopped
2 garlic cloves, minced
1 red pepper, finely chopped
1 green pepper, finely chopped
400g can chopped tomatoes
2 tbsp tomato puree
1 beef stock cube
1 tsp dried oregano
1 tsp dried basil
Salt and pepper
6-8 lasagne sheets
300g fat-free natural yoghurt
2 eggs, beaten
60g grated reduced-fat cheddar cheese
Fresh basil leaves to garnish
Method:
Preheat the oven to 200°C/180°C Fan/Gas Mark 6.
Heat a large frying pan over a medium heat and spray with low-calorie cooking spray. Add the minced beef and cook for 5-6 minutes until browned, breaking up any large chunks with a wooden spoon.
Add the onion, garlic, red pepper and green pepper to the pan and cook for a further 5-6 minutes until softened.
Add the chopped tomatoes, tomato puree, beef stock cube, dried oregano, dried basil, and season with salt and pepper. Stir well and leave to simmer for 10-15 minutes until the sauce has thickened.
Meanwhile, cook the lasagne sheets according to the packet instructions until they are al dente.
In a mixing bowl, beat together the eggs and yoghurt until smooth.
In a large baking dish, layer the lasagne sheets and beef mixture, starting and ending with the lasagne sheets.
Pour the egg and yoghurt mixture over the top of the lasagne, making sure it is evenly spread.
Sprinkle the grated cheese over the top of the lasagne and bake in the oven for 30-35 minutes until the cheese is golden brown and the lasagne is hot and bubbly.
Once cooked, remove from the oven and leave to cool for a few minutes before serving with a sprinkle of fresh basil leaves on top.
