● 2 1/2 cups all-purpose flour

●3 cups fresh strawberries, hulled and sliced

●3 cups rhubarb, chopped into 1/2 inch pieces

●1 tsp cinnamon

●1/4 tsp nutmeg

●1 tbsp unsalted butter, cut into small pieces

 

For the egg wash:

●1 egg

●1 tbsp water

Preheat the oven to 400°F (205°C).

 

In a large mixing bowl, whisk together the flour, salt, and sugar.

 

Add the butter and use a pastry cutter or your hands to cut the butter into the flour mixture until it resembles coarse crumbs.

 

Add the ice water, a tablespoon at a time, until the dough comes together and forms a ball.

Divide the dough in half and flatten each half into a disc. Wrap each disc in plastic wrap and chill in the refrigerator for at least 30 minutes.

 

In a large mixing bowl, combine the sliced strawberries, chopped rhubarb, sugar, cornstarch, cinnamon, and nutmeg.

Roll out one of the chilled dough discs on a lightly floured surface into a 12-inch circle. Transfer the dough to a 9-inch pie dish.

 

Pour the strawberry rhubarb filling into the pie crust and dot with butter.

Roll out the second chilled dough disc on a lightly floured surface into a 12-inch circle. Cut the dough into strips and use them to create a lattice pattern on top of the filling.

 

In a small bowl, whisk together the egg and water to make an egg wash. Brush the egg wash over the top of the pie crust.

 

Bake the pie for 45 to 50 minutes, or until the crust is golden brown and the filling is bubbly.

 

Remove the pie from the oven and let it cool completely before serving.
