This recipe takes the traditional mashed potatoes and transforms them into individual portions baked in muffin tins. The result? Perfectly portioned and beautifully golden mashed potato muffins that are both visually appealing and incredibly tasty. To make mashed potatoes in muffin tins, here’s what you’ll need:
Ingredients:
4 large potatoes (Russet or Yukon Gold are great options)
1/4 cup unsalted butter, melted
1/2 cup milk
1/2 cup sour cream
1/2 cup grated Parmesan cheese
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
Fresh chives or parsley for garnish (optional)
Instructions:
Preheat your oven to 375°F (190°C). Grease a muffin tin with cooking spray or butter to prevent the mashed potatoes from sticking.
Peel the potatoes and cut them into chunks. Place the potato chunks in a large pot and cover them with cold water. Add a pinch of salt to the water. Bring the water to a boil over medium-high heat and cook the potatoes until they are fork-tender, approximately 15-20 minutes.
While the potatoes are cooking, melt the butter in a small saucepan over low heat. Add the minced garlic and cook for 1-2 minutes until fragrant. Remove from heat and set aside.
Drain the cooked potatoes and return them to the pot. Using a potato masher or a fork, mash the potatoes until they are smooth and free of lumps.
Add the melted butter and garlic mixture, milk, sour cream, grated Parmesan cheese, salt, and black pepper to the mashed potatoes. Stir well to combine all the ingredients and create a creamy consistency.
Spoon the mashed potato mixture into the prepared muffin tin, filling each cup to the top. Smooth the tops with the back of a spoon or a spatula.
