Mashed potatoes are a beloved and versatile side dish that pairs well with a variety of main courses. They’re creamy, comforting, and always a crowd-pleaser. But what if we told you there’s a creative and fun way to elevate your mashed potato game? Enter mashed potatoes in muffin tins—a delightful twist on the classic recipe that will have your taste buds singing.
This recipe takes the traditional mashed potatoes and transforms them into individual portions baked in muffin tins. The result? Perfectly portioned and beautifully golden mashed potato muffins that are both visually appealing and incredibly tasty. Not only do they make an impressive presentation, but they’re also a convenient option for serving and portion control.
To make mashed potatoes in muffin tins, here’s what you’ll need:
4 large potatoes (Russet or Yukon Gold are great options)
1/4 cup unsalted butter, melted
1/2 cup milk
1/2 cup sour cream
1/2 cup grated Parmesan cheese
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
Fresh chives or parsley for garnish (optional)
Preheat your oven to 375°F (190°C). Grease a muffin tin with cooking spray or butter to prevent the mashed potatoes from sticking.
Peel the potatoes and cut them into chunks. Place the potato chunks in a large pot and cover them with cold water. Add a pinch of salt to the water. Bring the water to a boil over medium-high heat and cook the potatoes until they are fork-tender, approximately 15-20 minutes.
While the potatoes are cooking, melt the butter in a small saucepan over low heat. Add the minced garlic and cook for 1-2 minutes until fragrant. Remove from heat and set aside.
Drain the cooked potatoes and return them to the pot. Using a potato masher or a fork, mash the potatoes until they are smooth and free of lumps.
Add the melted butter and garlic mixture, milk, sour cream, grated Parmesan cheese, salt, and black pepper to the mashed potatoes. Stir well to combine all the ingredients and create a creamy consistency.
Spoon the mashed potato mixture into the prepared muffin tin, filling each cup to the top. Smooth the tops with the back of a spoon or a spatula.
Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the tops are golden and slightly crisp.
Once baked, remove the muffin tin from the oven and let it cool for a few minutes. Gently run a knife around the edges of each muffin cup to loosen the mashed potatoes. Carefully lift each potato muffin out of the tin and transfer them to a serving platter.
If desired, garnish the mashed potato muffins with fresh chives or parsley for a pop of color and added flavor.
These mashed potato muffins are incredibly versatile and can be served alongside a wide range of dishes. They make a perfect side for roasted chicken, grilled steak, or even as a standalone vegetarian option. You can also customize them by adding your favorite toppings such as shredded cheese, crispy bacon bits, or chopped scallions.
Not only are mashed potatoes in muffin tins a delicious and unique way to serve this classic side dish, but they also make for a fantastic make-ahead option. You can prepare the mashed potato mixture in advance, fill the muffin tin, and refrigerate until ready to bake
