Ingredients:
For the crust:
- 2 cups vanilla wafer crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
For the cheesecake filling:
- 3 (8-ounce) packages cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 cup mashed bananas (about 2 large bananas)
- 1 teaspoon vanilla extract
- 1/4 cup all-purpose flour
- 1/2 cup sour cream
For the banana pudding layer:
- 1 (3.4-ounce) package instant banana pudding mix
- 1 3/4 cups cold milk
For the whipped cream topping:
- 1 cup heavy whipping cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
Directions:
1️⃣ Preheat the oven to 350°F (175°C) and grease a 9-inch springform pan.
2️⃣ To make the crust, combine vanilla wafer crumbs, granulated sugar, and melted butter in a medium bowl. Press the mixture into the bottom of the prepared pan. Bake for 10 minutes, then set aside to cool.
3️⃣ Reduce the oven temperature to 325°F (163°C).
4️⃣ For the cheesecake filling, beat cream cheese and granulated sugar together until smooth and creamy. Add eggs one at a time, beating well after each addition. Mix in mashed bananas and vanilla extract. Add flour and sour cream, mixing until just combined.
5️⃣ Pour the cheesecake batter over the cooled crust. Bake for 60-70 minutes, or until the center is set. Turn off the oven and leave the cheesecake inside with the door slightly open for 1 hour. Remove from the oven and let it cool to room temperature before refrigerating for at least 4 hours or overnight.
6️⃣ For the banana pudding layer, whisk together instant banana pudding mix and cold milk until thickened, about 2 minutes. Spread the pudding over the chilled cheesecake.
7️⃣ To make the whipped cream topping, beat heavy whipping cream, powdered sugar, and vanilla extract together until stiff peaks form. Spread the whipped cream over the banana pudding layer.
8️⃣ Refrigerate the cheesecake for an additional hour before serving.
