Instructions:
- Prepare the Baking Sheets:
- Preheat the oven to 350°F.
- Line two large baking sheets with parchment paper.
- Melt Chocolate and Butter:
- In a heatproof bowl, melt the butter and 8 oz bittersweet chocolate over a saucepan of barely simmering water, stirring occasionally until smooth.
- Mix Wet Ingredients:
- In a medium bowl, stir together the eggs, vanilla, and granulated sugar. Set aside.
- Mix Dry Ingredients:
- In another bowl, whisk together the flour and baking powder.
- Combine Ingredients:
- Add the melted chocolate mixture to the egg mixture and stir to combine.
- Slowly add the dry ingredients and stir until well incorporated.
- Prepare Peanut Butter Balls:
- In a separate bowl, mix powdered sugar with peanut butter until combined.
- Roll the mixture into 1-inch balls, making 24 balls, and set aside.
- Form and Bake Cookies:
- Scoop about 1 ½ tablespoons of dough onto the prepared baking sheets. If the batter is too thin, refrigerate until firm enough to handle.
- Bake for 10 minutes or until the cookies are firm on the outside but do not overbake.
- Add Peanut Butter Centers:
- When the cookies are baked, press a peanut butter ball lightly into the center of each cookie.
- Let the cookies cool for 5 minutes in the pan, then transfer them to a wire rack to cool completely.
- Add Chocolate Topping:
- Melt the semisweet chocolate and spoon it over the peanut butter centers.
