Ingredients:
Garlic Parmesan Butter:
¼ cup softened unsalted butter
4 tablespoons grated Parmesan cheese
1 teaspoon Italian seasoning
½ teaspoon garlic powder
¼ teaspoon salt
Grilled Cheese:
8 thick slices of sturdy bread (sourdough or Italian)
1 ½ cups shredded mozzarella cheese
½ cup pizza or marinara sauce
24 thin slices pepperoni
Instructions:
Prepare the Skillet: Warm a large skillet or griddle over medium-low heat.
Make the Garlic Parmesan Butter: In a bowl, combine the softened butter, Parmesan, Italian seasoning, garlic powder, and salt.
Assemble the Sandwiches:
Spread half of the garlic Parmesan butter mixture onto one side of 4 bread slices. Place them buttered side down in the skillet.
Spread 1 tablespoon of pizza sauce on each slice of bread in the skillet, then add ¼ cup of mozzarella cheese, 6 slices of pepperoni, and another layer of mozzarella cheese.
Spread pizza sauce on one side of the remaining 4 bread slices and place them sauce side down on top of the cheese.
Spread the remaining garlic Parmesan butter on top of the bread slices.
Cook the Sandwiches: Cook for 3-4 minutes per side, or until golden brown and the cheese is melted.
Serve: Let the sandwiches cool slightly, then cut them in half. Serve with extra pizza sauce for dipping.
