— Ingredients Needed :


▢11 ounces vanilla wafer cookies 312 grams (1 box)

▢¾ cup desiccated unsweetened coconut 85 grams, divided

▢2 cups pecans 250 grams

▢½ cup powdered sugar 57 grams

▢¼ cup unsweetened cocoa powder 21 grams

▢¼ cup coconut rum 57 grams

▢2 tablespoons maple syrup 39 grams


— How to make this delicious Rum Balls :




Pulse the cookies in a food processor until the mixture reaches the consistency of coarse crumbs. Reserve ½ cup of cookie crumbs and set aside, leaving the rest in the food processor.

Step 2:

Add ¼ cup coconut and the pecans to the food processor and continue holding until the entire mixture is crushed to crumbs.

¾ cup desiccated unsweetened coconut,2 cups pecans


Step 3:

Add in sugar, cocoa powder, rum, and maple syrup and pulse until the mixture comes together into a dough.

½ cup powdered sugar,¼ cup unsweetened cocoa powder,¼ cup coconut rum,2 tablespoons maple syrup



Step 4:

If the mixture seems dry, add in a bit of water 1 tablespoon at a time. If the mixture seems too wet and/or sticky, add in additional cookie crumbs 1 tablespoon at a time.


Step 5:

Use a cookie scoop to form the dough into balls. Place on a parchment-lined baking sheet.

Roll the balls in the extra coconut and cookie crumbs.



— Recipe Notes:


If you don’t have chocolate wafers, you can use chocolate graham crackers instead.

You can use any type of nuts you like, but walnuts and pecans work best.

If the mixture is too dry, add more corn syrup. If it’s too wet, add more confectioners’ sugar.

You can also add additional spices to the mixture, such as cinnamon or nutmeg, to give it more flavor.
