Preheat oven to 425°F/220°C (200°C fan).

Pound chicken to 1.5cm / 0.6″ at the thickest part – using a rolling pin, meat mallet or even your fist (key tip for even cooking + tender chicken).

Mix Seasoning.

Line tray with foil and baking / parchment paper. Place chicken upside down on tray. Drizzle chicken with about 1 tsp oil. Rub over with fingers. Sprinkle with Seasoning.

Flip chicken. Drizzle with 1 tsp oil, rub with fingers, sprinkle with Seasoning, covering as much of the surface area as you can.

Bake 18 minutes, or until surface is golden per photos and video, or internal temperature is 165°F/75°C using a meat thermometer.

Remove from oven and immediately transfer chicken to serving plates.

Wait 3 – 5 minutes before serving, garnished with freshly chopped parsley if desired. Pictured with a side of Garlic Butter Rice with Kale.

➔ Recipe Notes:

  • Pound the chicken breasts to an even thickness: This will help the chicken cook more evenly and prevent any dry spots. Use a meat mallet or rolling pin to gently pound the thicker parts of the chicken until they are the same thickness as the thinner parts.
  • Use a meat thermometer: The best way to ensure your chicken is cooked through without overcooking it is to use a meat thermometer. Insert the thermometer into the thickest part of the chicken, making sure not to touch the bone, and cook until it reaches an internal temperature of 165°F (74°C).
  • Let the chicken rest: This allows the juices to redistribute throughout the meat, resulting in a more tender and juicy final product. Cover the chicken with foil or a lid while it rests to keep it warm.
  • Customize the spices: This recipe uses a simple blend of garlic powder, paprika, salt, and black pepper, but you can customize the spices to your liking. Try adding some cumin, chili powder, or dried herbs like thyme or rosemary for added flavor.
  • Serve with your favorite sides: Oven baked chicken breast pairs well with a variety of side dishes, such as roasted vegetables, rice, or a salad.

In conclusion, oven baked chicken breast is a healthy and delicious dinner option that is easy to make and customize to suit your taste. By following these recipe notes, you can ensure that your chicken comes out perfectly juicy and tender every time. Give it a try and enjoy a satisfying and nutritious meal!
